Not my normal bailiwick I admit, but the warm weather meant grilling out (how I love that season....my honey does the cooking, and I clean up....but there's never much....it was cooked on the grill!) - and that meant I was going to have my favorite veggies.
You probably know all about this....but I'm going to share anyway..lol!
You'll need:
Some bamboo skewers - around here there are two sizes, I get the big ones
Zucchini - usually take two to feed the three of us
Yellow squash - find the smaller ones - two of these too
Sweet onions - I get the Mayan onions - all the flavor - none of the bite
Green Pepper - two again
Mushrooms - the big package of fairly large ones
Now....slice the squash into thick slices, the green pepper into
generous pieces, quarter the onions, and clean up the mushrooms.
Build the skewers by alternating all the veggies, leaving a 'handle' at the bottom, but filling the rest right up. I usually make two skewers for each of us...but we like veggies - adjust for your own taste.
Once built, slide them inside a large baggie - they'll stick out the end, but that's ok. Sprinkle them generously with seasoned salt (Lawry's here), and dill, then drizzle olive oil over them. Flip the baggie and do the same to the other side. Let the veggies sit and mingle all their flavors for at least an hour, flipping the baggie every now and then.
When you grill the main dish, put those babies on the grill, on the sides, where it's not so hot. When the burgers or whatever are done, the vegiies, are hot and still crunchy - and the perfect side dish to almost anything!
